Fore Distillery Limited is a craft spirits producer founded in 2021 by native Meath‑born Oliver Guirke. Nestled in the shadow of the historic Fore Abbey at the edge of the Fore Valley, the distillery blends the traditional techniques Oliver learned in the United States with the wild character of the Irish countryside, creating a fresh take on classic favourites.

The distillery’s core range includes the Fore Valley Golden Irish Rum, White Irish Rum and Irish Poitín, alongside a series of small‑batch liqueurs such as Espresso Poitín, Wild Nettle Poitín and Wild Apple Poitín. Visitors can also purchase curated gift sets, the Heritage Collection, and a stylish hip‑flask set. In addition to production, Fore Distillery offers guided tours that showcase the history of the site—from 7th‑century monastic roots to modern distilling—providing tastings and insight into the craft.
