Coolattin Cheddar Limited is a family‑run artisan cheese producer based in the rolling pastures of West Wicklow. Founded by Tom Burgess, who has been milking his pasture‑fed herd for two decades, the company transforms fresh, early‑morning raw milk into a premium mature cheddar on the very day it is collected.
The hallmark of Coolattin Cheddar is its commitment to a truly “pasture‑to‑cheddar” process. Milk is drawn straight from cows grazing clover‑rich summer grass, rich in melatonin, and is pumped directly into the cheese‑vat without storage or pasteurisation. Hand‑milled, salted and mixed, the curd is pressed in 40 lb moulds for two days before being matured for over a year at a steady 10 °C. The result is a gourmet cheese that evolves from sweet fruit notes to a deep, nutty flavour, offering a complex aroma and silky texture.
