Corleggy Cheeses Limited is an award‑winning Irish artisan dairy, founded in 1985 on the “Little Windy Hill” of Corleggy. Specialising in handcrafted raw‑milk cheeses, the company draws its milk each morning from three neighbouring farms, where cows, sheep and goats are grass‑fed to produce the richest, most natural milk. Every cheese is made by hand in the traditional farmhouse style, with production kept deliberately small – never exceeding ten tonnes a year – to ensure each wheel receives the care and attention it deserves.

The range spans both hard and soft varieties, including the celebrated Drumlin and Cavanbert cow cheeses, the Creeny sheep cheese, and the Corleggy Port. Recent additions are white‑moulded fresh soft cheeses from cow and goat milk. Apart from vegetarian rennet and salt, no other additives are used, and each cheese matures for a minimum of three months, developing a natural rind and subtle, evolving flavours. Corleggy’s products are sold through Dublin farmers’ markets, select delicatessens, boutique shops and high‑end restaurants across Ireland, catering to connoisseurs who appreciate the slow‑food philosophy and the genuine taste of handcrafted Irish cheese.
